The group plans to expand their four additional stores across Plano, Sachse, Sherman and The Colony.

Chefs give white fish dishes modern spin
Cod is a rapidly growing menu item, according to the latest research from Technomic Inc.'s MenuMonitor, and is available on 31 percent more menus than just five years ago. Cod is still the most frequently prepared fried at restaurants, but baked, grilled and broiled are also among the top preparations. Many restaurants are also turning to similar fish, such as pollock, haddock and whitefish instead of the traditional cod filet. The Brass Tap uses haddock for a traditional fried fish tacos. The dish is topped with shredded cabbage, tomatoes, onion and a poblano pepper sauce on a flour tortilla, a perfect complement for the flakey fish.

Latest mega-tap tavern opening in Polaris area
The Brass Tap is getting a handle on the local craft-beer scene. The latest mega-draft beer dispensary, set to open July 20, joins such notable brands as the Pub at Polaris, Cantina Laredo and the Cheesecake Factory in the lifestyle section of Polaris Fashion Place. Brass Tap has 80 beers on tap, with 35 local brews and two dedicated lines for sours. Another 100 are available by the bottle.
